Famous Speckled Hen Cake Recipe
Here is the recipe for making Mrs Foster’s famous birthday cake
NB Sometimes this cake TASTES better than it LOOKS!
What you’ll need
250g butter
1 ½ cup brown sugar
3 cups self-raising flour
1 cup milk
2 eggs
2 Mars© bars chopped into small pieces
20 marshmallows cut into ¼’s
2 packets sherbet
125g butter
2 cups icing sugar mixture
¼ cup milk (approx)
Green food colouring
¾ cup shredded coconut
½ cup grated chocolate
1 red snake & 2 brown Smarties©
2 slivered almonds
here’s how you make it…
Cream 250g butter with the brown sugar, then add the 2 eggs. Add the self-raising flour alternately with the milk until all is blended. Stir through the chopped Mars© bars and marshmallows. Spoon the mixture into two round cake tins and bake at 160º fan forced for 30-35 minutes. Turn out onto cake rack and cool.
Take one cake and cut two sides off (to make the hen’s wings) and use the rest to shape the shoulders and head of the hen. Mix ½ cup icing sugar mixture with boiling water until it’s a paste consistency then add the 2 packets of sherbet. Spread two-thirds of this on top of the uncut cake and ‘glue’ the wings and shoulders onto it. Use the rest of the sherbet-icing mixture to construct the hen’s head and sit this on top of the shoulders.
Lastly, ice the cake by creaming the remaining butter with the rest of the icing sugar mixture, adding milk until a creamy consistency is achieved, and add green food colouring gradually until you’re happy with the colour. Sprinkle the shredded coconut and grated chocolate over the icing. Cut the red snake to form the hen’s comb and use a slivered almond for its beak. Add the Smarties© as the eyes. Add the right number of candles. Light and enjoy!
